hi friends! i wear a lot of hats in life and here on my little corner of the internet. full disclosure, i’m by no means a food blogger, but when i shared on instagram that i was making greek yogurt chocolate chip pancakes, i got a lot of messages asking for the recipe.
so here’s to attempting to wear another hat, because i want you all to have this recipe in your pocket.
although i usually try to be overall healthy with my diet, now that the news is out about my pregnancy, it’s probably no surprise that i’m trying to be even healthier. healthy eating is great, but i have a killer sweet tooth that is basically unstoppable. my most overused phrase is undoubtedly ‘dessert first because life is short.’
i’m a big fan of finding ways to make yummy eats that are healthy. the problem with that is, there is a lot of trial and error involved. some healthy recipes taste… healthy, and not at all like you were hoping.
the good news is that this recipe is not one of those. when i was craving pancakes the other morning, this recipe from paleomg hit the spot. deciding to add chocolate chips was just icing on the cake. oh, and to prove i’m not biased, nick gave his approval for me to make them every weekend.
– 1 cup of greek yogurt
– 2 eggs
– 3 tablespoons almond milk
– 2 tablespoons maple syrup
– 1 teaspoon vanilla extract
– 1 cup arrowroot flour
– 1 cup almond flour
– 1 cup dark chocolate chips
– 1 teaspoon baking powder
– pinch of salt
